Where did you travel on vacation?

As an innkeeper, we help our guests create memorable vacations and many times don’t allow ourselves the luxury of an escape.  Lynn and I just returned from an 11 day getaway to Seattle and Vancouver, BC.

Using a condo in Yaletown in Vancouver as our hub, we explored the surrounding areas enjoying a harbor cruise, Theatre under the Stars in Stanley Park, the teacup ferry rides to Granville Island,  and a trip to Grouse Mountain with a gondola ride to the top for incredible views.

A highlight of our trip was my first fly fishing adventure on the Pitt River, a glacier fed river. With water temperatures in the 50′s , waders felt great as I landed my first sock-eye salmon within minutes of casting a line.

So, where did you travel this summer?  Have you planned a fall getaway to southwest Virginia? Inn at Riverbend just celebrated it’s 7th year of providing a relaxing bed and breakfast getaway in the beautiful Appalachians mountains of Southwest Virginia! After a few months of assembling, reading, putting on heddles, tying up treadles, warping, and putting the warp on, I’m weaving!  Of course I picked an ambitious project as my first effort on my 8 shaft Baby Wolf-a 8 shaft star twill in black and cream. My mentor, Lynn Cosell, exclaimned “black and cream, what were you thinking?” when she first saw my choices.

I’ve learned a lot and it’s been frustrating but fun. I learned to weave in the 80′s and have only used a rigid heddle loom since then. My recent classes have included pre-warped looms and lots of sample weaving but no warping.

So next project-I’ll use colors, maybe only 4 shafts, something not 7 feet long, and a thicker fiber just to gain some miles on my new loom.

With Lynn in Florida for a week, Jackson needed to play so off we went to Doe Creek Kennels for a bit of doggy fun.  Located on Doe Creek Farm, a  400 acre apple orchard in Giles County,  just a few miles from Inn at Riverbend, Allison’s facility is a great compliment to what we offer our human guests. From meal times, to lots of play and nap time with a snack, the ability for dogs to run and play in a supervised, loving setting is appealing for larger, active dogs. Day care and overnight boarding are offered with flexible drop off and pick up times.

Jackson rested in his “roomy private suite with twin bed, fleece bedding and large windows” plus painted walls and framed artwork too!  He was a very happy dog when I picked him up. So when Lynn goes to play golf, Jackson may just get to return for a another fun day.

Sweet Potato Biscuits…yum

The most requested recipe from Inn at Riverbend holiday parties is our Sweet Potato Biscuits. Served with ham and Mike’s Tomato Jam, they were the hit this week!  Good news is you can make the dough, cut them, place them on a baking sheet and pop them in the freezer until firm. Then just place them in the preheated oven when you need a biscuit or two…better make that three since they are irresistable…must be the shortening!

Sweet Potato Biscuits

3 C all purpose flour
¾ C sugar
7 tsp baking powder
1 tsp table salt
2 C canned sweet potatoes, mashed, hot
½ C Crisco shortening

Preheat oven to 425 degrees.
Sift together flour, sugar, baking powder, and salt and set aside.
Mash and heat sweet potatoes.
Add shortening to sweet potatoes; combine with flour mixture.
Roll out on floured board, ¾” thick-dough will be very soft and sticky so add flour to the board and your hands.
Cut with a biscuit cutter to the desired diameter.
Place on an ungreased cookie sheet and brush tops lightly with butter.
Bake 10-12 minutes or until very light brown.

Make 16 large biscuits or 30 small biscuits.

Over the years, I’ve used recipes from many guests, past business clients, friends and relatives resulting in Suzie’s Sour Cream Pound Cake, Mike’s Tomato Jam, and Susan’s Cranberry Walnut Bread to name a few.

So now it’s your turn to send me the recipe for your favorite dish that we should serve for breakfast. Once we make the selection, we’ll invite you to the inn to be our Breakfast Chef of the Day and help us make your recipe.

All entries are due no later than January 15th. Please send all recipes and your comments as to why we should serve it to stay@innatriverbend.com. In the subject line write:  ”Calling all breakfast cooks”
